Maison Clarance – the terroir mustards

It is at the doors of the Perche are that François Lorin makes its delicious terroir mustards 100% made in France. An unusual activity when we know  that 95% of the mustard seeds used in our country comes from exportation !

History

Maison Clarance, it is above all else a family history where the soils are passed on from generation to generation. François, the son a cereal farmer who put down roots in its native Perche, takes over the family growing which represents 300 hectares of cultivated soils. In 2009, the decline of the economic activity jeopardises the company and our farmer think of a conversion.

Then emerges the idea of cultivate mustard seeds and conceive a traditional mustard entirely stem from french terroir. To embody this project, he wishes to control from A to Z the making process of its mustard in order to guarantee a perfect traceability. It is among others the reason why he decided to without any intermediary and work in a local distribution network.

After having taken the time to look for the best mustard seeds, its new activity starts on one soils hectare in 2010. The traditional mustards Maison Clarance are composed of three varieties of seeds which give them some character and a singular taste.

After various tastings, he finally finds its recipe with a unique flavour. This work was just recognized on a national scale by obtaining a gold medal during the Prizes Epicures of delicatessen in Paris in june 2017. Today, eight hectares are dedicated to this activity.

Making process

After their harvest, the mustard seeds are cleaned and dusted. In order to avoid warm them and following the tradition, they are grinded with a millstone before being mixed in a refinery machine. Then comes the seasoning process made using white vinegar and cider vinegar, the potting and the labelling.

The range of traditional mustards

Maison Clarance proposes a range of 4 traditional terroir mustards :

• For spicy lovers, the tradition mustard will go with meats and vinaigrette sauces.
• With a pinch of cider vinegar, the traditional wholegrain mustard is ideal with a prime rib of beef or to do a delicious vinaigrette sauce.
• With a slightly sweet and spicy taste, the honey mustard goes perfectly with white meats.
• The tarragon mustard will awake your red meat dishes.
